Murphy's Hot Hamburger

I find so many good recipes on The Pioneer Woman. When I saw the recipe for Murphy's Hot Hamburger, I knew that it would be supper that night! I'm so glad that I tried it, because it was fantastic. Nope, not one healthy part to it. But, if greasy spoon diner food is what you're craving, this is worth a try.

You'll need ground meat, potatoes, onion, garlic, beef broth, seasoned salt, pepper, flour, and vegetable oil.

Slice the potatoes into wedges, drizzle with oil...

...And season with seasoned salt and pepper. Bake in a 425 degree oven until they're soft and golden. (30-45 minutes)

While the fries are in the oven, combine the ground meat, chopped onion, minced garlic, salt, and pepper.

I couldn't resist adding a splash or two of Worcestershire Sauce, but it's not part of the recipe.

Mix well and form into balls.

I made four burgers. I didn't worry about forming them into patties. Just plop the meat ball into the skillet and flatten with your spatula. You'll also notice that I didn't use any oil. My ground meat has plenty of fat, so I didn't need the extra oil.

Fry 'em up!

You can already see the amount of fat my meat renders...

Like, lots of fat! But it's good stuff, so just leave it in the pan!

When your burgers are done, set them aside and add the flour. I needed all five tablespoons.

Whisk the flour in.

And continue whisking until the flour is golden.

I missed the pouring picture, but pour your four cups of beef broth right into the pan and continue whisking until all of the flour has "dissolved" and you have a smooth gravy.

Season with pepper. You need a lot of pepper, but I got a little overzealous with mine. It maybe could have used less...*cough, cough* I think I need some tea, please!

When the gravy is thick (I should have left it on the stove a few minutes more to really thicken up), pile some fries down on the plate first, followed by a meat patty, and then slather on the gravy! So delicious! (Not pictured: the broccoli for a vegetable. However, I'm not sure if it actually counted since it ended up swimming in gravy, too... Hey, I tried!)

This was also great as leftovers. Travis & I ate up all of the fries the first night, so the next day, we just used bread, meat, and gravy. That's wonderful, too! The bread soaks up all of the gravy and it's just so, so good!

OMG! That looks so good! I read Pioneer Woman the day that she posted that, but didn't really pay attention! If burgers weren't already on my menu for Friday, I'd make them tonight. Maybe next week instead...

Made this tonight and everyone liked it. Used red potatoes (that was all I had and the store is too far away!) and I changed the seasoning. I used Simply Organic's Chophouse Seasoning. It is a grinder with garlic, sea salt, black pepper, dill see, coriander, and chili peppers. I also added a the extra black pepper like you did and a little chipolte. It was delicious. Thanks for sharing your recipe finds!

I grew up in Bartlesville, OK and ate the Murphy's hot hamburger hundreds of times. Sorry, but I never ate it with "baked" fries. They were fried as God and old man Murphy intended.

Agreed. Thick Homestyle Deep Fried Fries using plain old Idaho potatoes & don’t peel them. The gravy’s wrong in this recipe as well. Can’t figure out Murphy’s secret gravy to save my life

I'm sure that your recipe is delicious but as mentioned in a previous comment Murphy's fries are "fried" and the gravy is much, much darker and richer. The base of a hot hamburger is a piece of toasted white bread. Grew up eating at Murphy's and it's still the best!

Just have to tell you all that I’m from Bartlesville and my family frequently went to Murphy’s. The burger is never on top. It goes like this...Texas toast on the center of the plate first, then add the hamburger steak, top with gravy, pile fries on top (deep fried are best), then cover with gravy. Enjoy your “Hot Hamburger with gravy over all”. I highly recommend a trip to Murphy’s Steakhouse for the real thing!

I've got the gravy recipe. Scot Billingsley. She was close main missing is powdered brown gravy mix and small amount of strong black coffee. Also kitchen bouquet to help the dark color. Old man Murphy gave me this and garlic dressing recipes yrs ago like 1985. While He would gamble on pool shots he set up at the Ritz. I won $ 2k. He would put a ball at each pocket and said if I could shoot them in. Any order 1 at a time he would bet 1k I would miss. After I won 1st time he said Double or nothing. I made another grand and finally he had someone show up to drive him home. That was when I asked for both recipes and knocked off $200 for them. Kinda funny promised wouldn't give them out in exact amounts for at least 10 yrs. Still haven't given to very many people. Enjoy Murphys. Best place to clog artery's happily. 🙂🙂
