On another note, tonight, we made Tuscan Lemon Chicken. It was super easy since it was cooked on the grill. The recipe calls for a marinade of olive oil, lemon zest, lemon juice, rosemary, garlic, and pepper. Grill or barbecue on low heat for 15 minutes a side. For the last 10 minutes, cut another lemon in half and throw on the grill. We drizzled the grilled lemon over our chicken and white rice. Delish! I will definitely try this recipe again. Thanks, Ina!

Thanks for the chicken update. I remembered that we had the same Ina cookbook so I've got the recipe too! I'm just not that great with the grill.
I wasn't too sure of myself on the grill, either, when I started using it a lot. But, we have a gas grill that's really girl-friendly, and the more I use it, the more comfortable I get. Besides, Travis doesn't mind eating my 'practice' steaks!
I made the Tuscan Lemon Chicken for Nick on Saturday and he loved it. He said I could make it for him everyday. I made a wild mushroom rice and grilled zuchinni, yellow squash, green bell pepper and onion (which I tossed in olive oil, minced garlic, salt, pepper, and threw in two slices of lemon for a little zing)
Will one of you with the Tuscan Lemon Chicken recipe send it to me? I don't have Ina's cookbook!
